How Do We Help?

Membership provides access to a growing library of recipes developed specifically for large scale catering. It additionally provides members with inspiration each month through a range of new recipes, plus informative nutrition and culinary blogs focused on large scale catering.

Each of our recipes creates full flavoured, nutritious and cost effective food and are drawn from a wide range of cuisines, incorporating much loved dishes from yesterday and popular dishes of today.

Our recipes also include nutritional analysis and diet support with each recipe displaying relevant claims based on FSANZ standards.

But Our Help Does Not Stop There!

Each recipe is scalable and includes our recipe scaling calculator, which allows a member to select the production quantity or portion numbers and portion size (yield) required.

Each recipe can optionally be costed and have a portion size nutritionally analysed to review its nutrient content e.g. protein, calcium or iron, before being saved using our My Recipe function, for use next time the dish is produced (on the menu).

Tested Recipes

Our recipes are all kitchen tested to ensure they are full flavoured, nutritious and cost effective. Testing also allows us to determine yield loss in the preparation and cooking process which helps ensure the accuracy of each recipe's final yield.

During this process certain ingredients are identified, mainly herbs and spices that need to be multiplied by a lower percentage as the recipe is produced in larger quantities. This data is built in and automatically factored by our scaling calculator every time the recipe is used.

Each recipe is scalable and includes our recipe scaling calculator, which allows a member to select the production quantity or portion numbers and portion size (yield) required.

How is a Recipe Scaled and Costed?

To scale a recipe for the quantity (yield) you want to produce, select your scaling preference, either the NUMBER OF PORTIONS option or the TOTAL YIELD option.

With the NUMBER OF PORTIONS option. Select a measurement system Metric or Imperial. Then enter the number of required portions e.g. 200. Lastly, enter the portion size required e.g. 225g.

For the second option, select TOTAL YIELD. Then select a measurement system Metric or Imperial. Lastly, enter the required total yield size e.g. 45kg.

To finalise the recipe, click CALCULATE RECIPE, the calculator will scale the ingredient quantities required.

To cost a recipe, in the COST column of the recipe, add each ingredient cost per unit of measure, this can generally be found on a recent supplier invoice.

The recipes scaling calculator will calculate both the TOTAL COST and if applicable the COST PER PORTION of the scaled recipe.

This information can then be saved using our My Recipe function, for use next time the recipe is produced (on the menu).

Nutritional Analysis

Each recipe provides key nutrient content per 100g. This analysis, completed by our Dietitian is also provided for a selected portion size e.g. 225g if the NUMBER OF PORTIONS option is used to scale the recipe.

Nutrient analysis is provided for total energy, protein, total fat, saturated fat, total carbohydrates, sugars, sodium, dietary fibre, calcium and iron.
